Today, I wanted to share a recipe I created that follows up with cooking with cast iron. Several years ago (well maybe 10 or 15 years) I was eating at O’Charley’s and ordered a dish called Beef Tips Monterey which became my favorite dish! However for some reason or another they took it off the menu so I decided to create my own version. Its easy and simple and BEEF is what’s for dinner tonight!

The serving size for this recipe is 4
2 lbs of top round steak or any type of steak ( I use top round because its less expensive).
1 green bell pepper
½ to 1 white onion depending on your liking of onions
1 can of mushrooms **** (fresh mushrooms will work also and this is an optional ingredient)***
¾ cup of water
¼ cup of A-1 steak sauce
Salt and pepper to taste
Cast iron skillet
1- 8oz block of Monterey Jack Cheese
Pre heat Oven at 375 degrees
Cube meat into bite sized chunks. Lightly grease cast iron skillet and place meat in skillet.
Slice onions and bell peppers into strips add and add to skillet.
Add can of mushrooms and/or fresh mushrooms if you choose to use this ingredient.
Add water on top of ingredients in the skillet.
Add A-1 sauce and salt and pepper.
With a large wooden spoon mix all ingredients together.
Bake for 45 min to 1 hour at 375 degrees
While dish is baking slice Monterey jack cheese into thin slices, set aside.
When your meat has browned and your peppers and onions appear tender, pull skillet from the oven and drain half of the liquid. Then top with cheese and bake until melted.
Serve over rice or with a baked potato or your favorite veggie and ENJOY!!
